Ingredients for 4 people

500g Chickpeas (very soft either from a jar or freshly cooked – not tinned!)
2 tbsp of tahini
Juice of 1 large lemon
1 Clove of Garlic
1 tsp Turmeric
1 tsp Cumin
2 birds eye chillis
Salt and pepper
¼ Cup Cold Water

Garnish

½ cup chopped flat parsley
¼ cup chopped walnuts
Olive oil to drizzle

Method

Add all the main ingredients (not the garnish) into a food processor that’s the right size and pulse till very well blended. Season with salt and pepper. Add cold water to soften if needed, and add extra lemon and chilli to taste. Transfer to a mezze bowl and garnish with parsley, walnuts and drizzle with extra virgin olive oil.

Ingredients for 4 people

2 Cups finely chopped flat parsley
¼ cup chopped walnuts
¼ cup cooked buckwheat
½ cup pomegranate seeds
¼ cup chopped red onion
¼ cup diced cucumber
¼ cup diced pineapple
½ cup diced plum tomato
¼ cup chopped mint leaves

Dressing

½ cup lemon juice
½ cup extra virgin olive oil
1 tsp pomegranate molasses
salt and pepper

Equipment needed

Mixing bowl
Chopping board
A good knife!

Method

Mix all the ingredients in a large bowl, and add dressing just before serving

Ingredients for 4 people

400 G Minced Turkey OR/ 400 G Minced Hake or Minced Cod
½ cup Flat parsley chopped
¼ cup finely chopped red onion
¼ cup finely chopped coriander
1tsp turmeric powder
1tsp ground cumin
1tsp sumac
1tsp Aleppo pepper
2 finely chopped birds eye chilli pepper
salt and pepper to season
¼ cup extra virgin oil

Equipment needed

Food processor (optional)
Disposable hygiene gloves (for chopping/mixing chilli)
Frying pan

Method

Mix all the ingredients in a large bowl really well with your hands till everything is really well incorporated. You can use a food processor as well but it’s better with your hands!

Make them into 5cm sausage shapes with square edges, and refrigerate for 30 minutes till firm.

Heat up a frying pan to a medium heat with olive oil or ghee and fry the Kofta till cooked and nicely golden.

Serve immediately with Buckwheat Flat Bread.
